I greeted the hints of summer warmth (that found their way into an April evening) by sipping a tea cocktail on APO bar & lounge's rooftop deck. After I discovered that their spring cocktail line included a tea infusion, the matcha fizz, I immediately made my way over to introduce this cocktail to my taste buds (thanks drew).
As I pretended to peruse the menu, simply to soak in the details of fellow cocktail contenders, the name itself seemed to jump from the page: Matcha Fizz: Gin; shochu; lemon; local honey; matcha; finished with egg white foam and sage.
Each sip was packed with the well-balanced, bright flavors of lemon, gin and matcha. The subtle sweetness of the local honey balanced out any bitterness that matcha sometimes brings to the table, all while enhancing matcha's delicate sweet notes. Matcha's lovely vegetal flavors were complimented by the shochu and gin. Although the egg white foam created the illusion of a carbonated fizz and added a silky texture to each sip, I could have done without its slight sulfur scent.
Overall, I enjoyed every sip of this fresh spring drink. I raise my cup and my cocktail glass to APO for adding a tea infusion to their stellar list of delicious spring sips.
